Sautéed Garlic Eggplant Pita Sandwich

I mentioned that there was another eggplant sandwich that I make when I wrote about my 5-Spice Marinated Eggplant Pita Sandwich! Here it is! This one is sautéed and not fried! After all of my recent eats I needed to write about and eat something much lighter.

This eggplant sandwich can be served in a pita just like the other. Once you’ve got it in the pita top it with whatever you want. Make sure you top it with my eggplant sauce!


What you’ll need:

  • 1 Chinese eggplant per every 2 people served
  • 2 tbs apple cider vinegar per eggplant cooked
  • 1 tbs olive oil per every 2 eggplants cooked
  • 1/4 cup water
  • a few cloves of garlic minced

How to make it:

Dice the eggplant. Put 2 tablespoons of apple cider vinegar, 1/4 cup water, 1 tbs of olive oil and garlic in a pan with a lid and eat on medium. Use garlic to taste! So, go crazy with it if you want. Once all of this gets warm add the eggplant and cover and sauté it for 10 – 15 minutes. If it is tender, it’s done. If it’s not tender, let it cook until it is!

You need some sauce for that eggplant.

Okay, you need some details about this sauce. It’s a mayo and mustard sauce. It tastes really good on the eggplant in the pita. I used a brand called lemonaise. The lemonaise is chipotle flavored. It’s pretty natural, dariy-free, but it does contain eggs. I’ve made this sauce before with veganaise which also works very well. Also, a non-chipotle flavored mayo will work fine!!!

What you’ll need:

  • 2 tsp lemonaise, mayo, or veganaise
  • 2 tsp spicy mustard
  • 3 tbs nutritional yeast (optional)

How to make it:

Stir all of the ingredients together well. You might need to add a dash of water if the nooch is very dry and not mixing well. Enjoy liberally on an eggplant pita sandwich!

    This looks amazing!! I’ve always sucked at cooking eggplant but this has inspired me to give it another go because I want one of them sammiches.

    I love eggplant anything. Apple cider vinegar is good stuff too – I drink it in a cold glass of water every morning. All the sauce in that pita looks intoxicating!

    The sauce sounds divine. Actually the whole sandwich does. I’d add some boiled eggs to this baby (and maybe bacon… tempeh bacon for the vegetarians), fresh tomato slices and then it would be really perfect :)
