Clearance Rack Pillaging: White Hominy & Tofu Tostada

This week I went clearance rack pillaging but really I just found myself at the dollar store buying an assortment of stuff. I announced a few weeks ago that I wanted to make a series out of taking ten dollars to the store and seeing what I can make. This week I used 3 to 4 dollars plus some stuff on hand and made White Hominy & Tofu Tostada.

It’s good or so the boyfriend says. I sometimes make recipes and experiment on him. I figure if he doesn’t die likes it, it’s good. I liked it too! This little dish makes a nice appetizer or side dish. You could serve it as a snack at a cocktail party too. This recipe serves 2!

What you’ll need:

  • 6 ounces of tofu
  • 1/2 c of white hominy
  • 2 tostadas
  • 1/4 cup vegetable broth
  • 1 tsp ground cumin
  • 2 tsp corn starch
  • 1 garlic clove chopped
  • lime wedge
  • 1/2 of an avocado cut in half

How to make it:

In a sauce pan combine 6 ounces of tofu, 1/2 cup white hominy, chopped garlic and vegetable broth. Simmer until most of the liquid evaporates and absorbs into your ingredients. Make sure to stir while it is simmering. When most of the liquid is absorbed quickly add the cumin and the corn starch and continue to stir. After a few seconds or maybe a minute it should no longer be wet. If your tostadas are ready you can spoon your delicious topping on them!!! Place half of the half of avocado on each!

What I forgot to do when I made this yesterday is to squeeze lime on the tostadas once the food is plating. It needs lime. It demands lime. Please squeeze a lime wedge on each tostada and its topping before serving!

Not including the tofu, cumin, and broth which I already had this recipe only cost about 3 dollars to make!!!

    hominy is like a soaked corn. it was on my fucking final exam. anyways cook this for me please. Or we can just drink together. Or both really.
